I could eat tacos all day, every day for the rest of my life if you let me. Tacos have of way of allowing you to eat a lot of great vegetables together in a wrapped corn tortilla. The flavors are typically astounding and robust, and I love vegetables.
3 medium zucchini sliced into 1/2 inch diagonal pieces
4 portabello mushrooms
10 green onions
2 yellow peppers
8 vegan corn tortillas
Vegan cheese (optional)
3 drops lemon essential oil
3 drops lime essential oil
2 drops cilantro essential oil
Marinate the vegetables in olive oil and kosher salt before grilling. Grill all veggies for a couple of minutes and stack inside corn tortillas. Dice the tomatoes and slice the avocado and jalapenos, placing on top.
